About this place
This is a cold noodle place that prepares only as much buckwheat as it will use the same day, because the flavor and nutrition fade after a day. Its noodles are soft and mild rather than chewy, and they pair well with beef-bone broth simmered for about 10 hours; the buckwheat cooking water, called yeopcha, is also a specialty.

옹진냉면에서는 단 하루만 지나도 메밀의 맛이 영양을 잃기 때문에 메밀을 그날 쓸 만큼만 준비한다. 쫄깃쫄깃한 맛 대신 부드럽고 담백한 면과 10여 시간 동안 곤 사골 육수가 잘 어우러진다. 메밀 삶은 물인 엽차 또한 별미이다.
